Place mangoes in a cool, dry spot — not in the fridge, not in direct sunlight. Keep them in the box with the straw for the first 2–3 days.
Look for a golden-yellow colour appearing from the top near the stem. A light floral aroma will start to fill the room — that's the sign.
A ripe Devgad Hapus gives slightly to gentle pressure — firm but not hard. If still very firm, give it another day.
Once ripe, refrigerate and consume within 2–3 days. Never refrigerate unripe mangoes — it stops the ripening process permanently.
